Turkey, Avocado and Apple Salad

This tasty summer salad is sure to be a crowd pleaser.

Now that the nine days are over, it is time to dive back in to meat consumption full time, right? Not being a huge red-meat eater, it is not steaks or hamburgers I’ve been craving but the lighter fare – especially when it is played up so nicely in a salad like this.

Cubed turkey breast is tossed with sweet chunks of apple and creamy avocado for an effortless summer dish. I studded mine with some pomegranate seeds – known as arils – but if you’re not a fan or you can’t find them in season substitute sunflower seeds (or even pine nuts) for some added crunch.
If you buy turkey fresh from a deli, ask them to leave it in one big chunk so you can cube it yourself – or there are some brands that sell unsliced turkey pre-packaged. Choose an apple with a firm flesh such as golden delicious or granny smith for the best result.
Turkey, Avocado and Apple Salad – Serves 2
8 ounces turkey breast
2 medium apples
1 avocado
¼ cup pomegranate seeds OR 3 tablespoons sunflower seeds
1/3 cup mayonnaise
2 tablespoons sugar
1 tablespoon apple cider vinegar
Dice the turkey breast in to ½” cubes. Peel, core and dice the apple. Slice the avocado in half, remove the pit, and dice in to chunks.
Whisk the mayonnaise, sugar and vinegar together. Add all the ingredients to a large bowl and mix gently. Serve chilled.
