With summer behind us and fall in full swing, now is the time to take advantage of the last few weeks of the pleasant weather to go on family outings in the great outdoors. Sukkot Chol HaMoed is an optimal time for day trips and breezy picnics because the kids are off and you finally have time to explore after spending so much energy preparing for the marathon of holidays.
While everyone is tired of elaborate meals, the need for some tasty bites on the go is still required when planning outings with the family. These fun, easy and delicious ideas will help you pack up stress free tasty bites that are sure to keep the whole family happy.
Sabich Sandwhich
Days out in parks, outdoor centers, fairs and markets with kids means it’s important to remember to pack plenty of water to keep them hydrated as they run around. Sliced fruits and vegetables are healthy and delicious ways to keep kids energized.
For a larger bite that’ll go with your outdoor surroundings wile satisfying parents and kids alike is this creative twist on a sabich sandwich from Jaime Geller: These mini sandwiches can be assembled at the park or beforehand and are easy to customize for each person’s taste and preference.
The only prep required is to bake a package of Tnuva potato bourekas according the instructions on the package, and slice some vegetables. The bourekas will be the base of your delicious sandwich bites. The whole thing takes about ten minutes to prepare and is easily stored. All you’ll need is 1 cup of sliced eggplant (or store bought eggplant salad), six hardboiled eggs, also sliced, one large tomato and parsley. Just cut open the bourekas to create a pocket and stuff it with all the sliced ingredients. Don’t forget the sauces for extra flavor! Tehina or Amba are great options for dipping or drizzling your Sabich Potato Boureka Sandwich.
Tasty Cheese Wraps
These wraps are a great solution to the on-the- go bite dilemma, especially if your drive is long. Our favorites include a range of Tnuva cheeses and are super easy to prepare ahead of time.
Number one at the top of our list is a whole wheat wrap with pesto spread across it, thick slices of mozzarella (cut from the cheese block) and thinly chopped portabello mushrooms, with sprigs of fresh basil. Quantities vary and you can easily eyeball the ingredients.
Another tasty option is roasted antipasti, with Tnuva’s goat cheese lovingly encased in a spinach wrap. If you’re looking for a way to bring a touch of the Mediterranean to your picnic or outing try a labaneh, olive and zatar wrap.
Easily stored in cling film or lined in a shallow Tupperware container, all you need is some parchment/wax/rice baking paper to package them in and unwrap as you please.
