Use up your Thanksgiving leftovers in some fun recipes

Congratulations. If you've made it this far, you've survived Thanksgiving. And since there's a good chance you have some leftover turkey sitting around in the fridge, I'm here to help you use it up in some more exciting ways than a sandwich.

When your turkey is cold, remove it all from the bones and shred it in to nice-sized chunks. At this point you can toss it in to any green salads to turn them in to a meal, use it in soups to make them heartier or mix with your favorite sauce and serve it on bread for a pulled turkey sandwich.

But for something a little more inventive, try these Nosh Pit classics updated a little to use up your giant bird.

1. Coronation turkey

Follow the recipe as is, simply preparing the sauce and swapping out the shredded chicken for turkey. Serve alongside rice, couscous, pasta or any other starch.

2. Turkey and sweet potato stew

Prepare the recipe as is, skipping the chicken entirely. Then, in the last 5-7 minutes of cooking, add about 3 cups of shredded turkey to the pot and stir, cooking just until it is heated through. Delicious!

3. Whole wheat linguine with turkey, zucchini and mushrooms

Toss some of your shredded turkey with pasta and vegetables for a hearty, tasty dish. You can follow this recipe exactly, simply adding the shredded turkey in to the pasta and vegetables at the end, and tossing to combine.

4. Turkey, apple and quinoa salad

Enjoy your turkey in this fresh, seasonal dish – simply swapping out the shredded chicken for shredded turkey and enoying it for lunch, dinner or a snack!
