I've been known on occasion to have breakfast for dinner, and even rarely to have dinner for breakfast, but rarely have I mixed the two together. But that all changes with this recipe for crispy Asian drumsticks – that gets a healthy but satisfying crunch from crushed up rice krispies.
The cereal adheres to the chicken with a mild but tasty Asian-inspired sauce, and the coating gives each bite of chicken a delicious crisp. You may even be able to hear a snap, crackle and pop! If you want to keep some of the sauce for dipping, reserve it before dipping the raw chicken in, to avoid cross contamination.
Crispy Asian Drumsticks
2 cups crisped rice cereal
1/4 cup soy sauce
1/4 cup honey
1/2 cup ketchup
2 tablespoons brown sugar
package of 6 drumsticks, skin removed
Crush the cereal in a food processor or pour it in a plastic bag and smash with a glass or rolling pin. You want a mixture of larger pieces and fine dust.
Mix together the soy sauce, honey, ketchup and brown sugar until smooth.
Working one at a time, dip the drumsticks in to the ketchup mixture and then in to the crushed cereal.

Place in a metal or glass pan, spray lightly with cooking spray, and bake uncovered on 375 F for 30-40 minutes.
